The Story
Region: Barsac, Bordeaux, France
Grape: 100% Sémillon
Tasting: Citrus / Stone fruit / Floral / Mineral / Limestone / Medium Body / Long Finish
Pairing: White Fish with Butter Sauces / Poached Chicken Dishes with Vegetables / Brillat Savarin / Scallop Risotto / Lobster Ravioli
Producer: The first dry white wine in the history of Château Climens, Asphodèle is one of the singularities of this unclassifiable Premier Cru estate from Barsac. Beyond its genetic character as 100% Sémillon sourced entirely from the estate's terroir, this newborn wine is atypical and surprising. Named after a field lily symbolising nature's rebirth in biodynamic viticulture, Asphodèle represents a bold new chapter for this historic property.
The entire vineyard has been farmed biodynamically since 2010 with Demeter certification. Grown on ferruginous clayey sand over cracked asteriated limestone bedrock, the 15-year-old vines produce fruit of exceptional purity. Vinified naturally in concrete vats and aged for nine months, the wine offers a precise interpretation of this unique terroir. The result is a wine that is both dense and delicate, full of sap, combining grace and character. Vibrant and pure, it has been praised as "unquestionably a great white wine" by critics.
ABV: 12%
Vol: 75cl
Contains Sulphites
