The Story

A truffle slicer made from rosewood with a razor-sharp waved stainless steel blade, crafted by Sanelli Ambrogio. The only way to get the most from a fresh truffle is to shave it as thinly as possible — paper-thin, almost translucent shavings that maximise surface area and release the full aroma the moment they hit a warm plate. A good knife cannot do this. A truffle slicer can.

The rosewood body is warm to hold and handsome on the table — this is a tool designed to be used in front of guests, not hidden in a drawer. The waved blade creates textured slices with more surface area than a straight blade, which enhances aroma release and prevents delicate shavings from sticking. It also produces the slightly curled, ruffled shavings that look striking over a finished dish.

Available in waved or straight blade. The waved blade is more versatile and better suited to truffles, soft cheeses, and chocolate. The straight blade gives cleaner, more uniform slices and is preferred for precise presentation.

Origin: Italy
