White truffle oil has a different character from black. Where the black version is earthy and deep, the white is more pungent, garlicky, and aromatic — closer in spirit to the fresh white truffles it is made from. It is more assertive on the nose and carries a sweet, almost honeyed intensity that can transform a simple dish with just a few drops.
The same caveat applies here as with the black: the vast majority of white truffle oils on the market use bis(methylthio)methane, a synthetic compound that tastes chemically harsh and one-dimensional.
