The Story

The wiri wiri is a small, round chilli pepper native to Guyana, where it has been a cornerstone of local cooking for generations. Closely related to cayenne, it grows vertically at the edge of the tropical forest in the hot, humid conditions the plant demands — climatic requirements that limit its cultivation and keep it far less common than its better-known relatives. The peppers ripen to bright red before being sun-dried for several days, which gives them their characteristic wrinkled appearance and a look not unlike a dried cherry tomato — earning them the local nickname "cherry pepper."

At 10/10 on the Scoville scale, this is a genuinely fierce chilli. But the heat is only part of the story. Wiri wiri carries a distinctive savoury, tomato-like flavour that sets it apart from fruitier hot chillies like habanero or bird's eye. That savoury depth makes it particularly well suited to slow-cooked dishes, stews, soups, sauces, and marinades. In Guyanese cuisine it is essential to dishes like pork colombo, accras, and Creole fritters. It also works well in spicy oils, mango salads, and anywhere a deep, rounded heat is needed rather than a sharp, one-dimensional burn.
